Grow a Garden 2 runs on a fixed day/night cycle, and it matters more than it looks — stealing is only possible at night, and every night rolls one of five moon outcomes. Phases are not the same thing as weather, which is a distinction most guides collapse.

How long each phase lasts

A full cycle runs 10 minutes, so you get six nights an hour — and six chances for someone to take your crops, or for you to take theirs.
Phases are not weather events
This gets collapsed on most sites and it causes real confusion. Day, Sunset and Night are times of day. Weather events — Rain, Lightning, Starfall, Sunburst, Snowfall, Aurora — roll independently, on top of the phase.
So you can have Rain during the day, and a Gold Moon at night, and they are separate systems. Neither Day nor Sunset grants any mutation.
One trap worth naming: the original Grow a Garden's Sunset grants the Verdant mutation. Grow a Garden 2's does not. If you find a guide saying otherwise, it is describing the other game.
Why night is the phase that matters
Stealing is only possible at night. That single rule is why the game has defensive pets and defensive crops at all — the Venom Spitter, Venus Fly Trap, Bee, Bear, Bald Eagle and Ice Serpent all act at night and do nothing the rest of the time.
It also means two minutes in every ten is when your garden is actually exposed. Everything defensive you own is idle for the other eight.
The moon roll
On entering Night, the game rolls exactly one moon outcome:

These sum to exactly 100%, which is how you know the table is complete rather than partially documented — a test most published drop tables in this game fail.
Roughly one night in four brings a special moon, and the two seed-spawning ones cannot spawn seeds with fewer than two players in the server, though they do work in private servers.
